Ensemble’s Dark Chocolate Bark with Dried Fruit

In honor of Alzheimer’s Awareness Month, Allegro is focused on food that inspires and nurtures the body and brain. Here is a recipe for Memory Bark and an overview of all brain health benefits that come with this delicious snack.

Prep Time 2 hours: Yields approximately 1 lb.

Ingredients

  • ½ lb. Dark Chocolate Ghirardelli morsels
  • ½ lb. Semi Sweet Ghirardelli Morsels
  • 1 tsp of Cinnamon
  • 1 tsp of Cardamom
  • ½ cup each of roughly chopped dried blueberries and dried strawberries
  • ½ cup each of toasted chopped slivered almonds and walnuts
  • 3 Tablespoons of unsalted sunflower seeds
  • 3 teaspoons of flax seeds

Directions

Line a rimmed baking sheet with parchment paper and set aside.

Melt ¼ pound each of Semi-Sweet and Dark chocolate morsels over a water bath. Once melted, remove from heat and stir in the final ¼ pound each of the Semi-Sweet and Dark chocolate morsels into the already melted chocolate. Chef Allegro – Easy Chocolate Mousse

Chef Allegro is back with a quick recipe from our Dining Services Director, Sean, from Tallahassee. This chocolate mousse recipe is a senior-friendly recipe can be made at home as a snack or a yummy dessert.

Ingredients: 1 cup Heavy Cream or Half & Half 1 bag of Hershey’s Chocolate Chips (Semi-Sweet 1 pound) 1 tub (8 oz) of Whipped Cream (Cool-Whip) 3-quart microwave safe bowl 1 wire whisk

Instructions: 1. Take 1 cup of the half and half or heavy cream and pour into a microwave safe bowl. 2. Add the Hershey’s Chocolate Chips with the cream in a bowl. 3. Microwave on high for 30 seconds at a time and stir after each time. 4. Repeat until chocolate is melted and mixed thoroughly until creamy. 5. Let cool until the mixture reaches room temperature. 6. Add a tub of whipped cream to chocolate and whip using a wire whisk. 7. Place in refrigerator until cold and serve in the desired container. 8. You can use crushed graham crackers on the bottom of mousse for added flavor.

Chef Allegro – Gazpacho Soup

Spring is here and summer is right around the corner. But that doesn’t mean you still can’t enjoy soup. Gazpacho soup is a widely popular alternative enjoyed during hot summer months. Chef Allegro brings you a delicious and easy recipe when you are in the mood for soup.

Ingredients

1 Can Tomato Juice

½ cup Vegetable Broth

2 cans (14.5 oz) Diced Tomatoes

1 seedless cucumber, cut into 1/4-inch dice

1 small yellow bell pepper, seeded and cut into 1/4-inch dice

1 small onion, cut into 1/4-inch dice

2 tablespoons chopped fresh cilantro

1 thinly sliced green onion

1 fresh lemon juiced

Garnish – Sour Cream

Instructions

Mix tomato-vegetable juice, vegetable broth, tomatoes, cucumber, canned tomato, with juice, green bell pepper, red bell pepper, olive oil, green onions, lemon juice, cilantro, together in large pot. Cover and chill for 3 hours before serving to allow flavors to blend. Serve with a dollop of sour cream on top.

Chef Allegro – Grilled Salmon With Crabmeat, Tomato Cream Sauce

There are several health benefits associated with eating salmon. Learn more about these health benefits here. As a result, Chef Allegro is bringing you an easy and delicious way to prepare salmon the next time you’re in the mood to cook.

Ingredients

4 salmon filets (4oz. each) 1 ripe red tomato 1.5 oz. clean picked crab meat 1 teaspoon chopped garlic 1/2 cup white wine 1/2 tablespoon olive oil 1 pinch black pepper 1 cup heavy cream

Instructions

1. Preheat oven to 350 degrees. 2. Grill Salmon filets till golden brown, finish cooking in oven (5-7 min) until internal temperature of 145 degrees. Once cooked, set aside. 3. In a sauce pot heat olive oil until very hot, do not burn. 4. Add diced tomato, sauté till soft, then add garlic, pepper and crabmeat and cook till garlic is lightly browned. 5. Add white wine and cook till smooth. 6. Add butter and heavy cream, reduce till smooth thickened consistency. 7. Place sauce on salmon, covering half of filet.

Chef Allegro – Allegro Summer Salad

Summer is in full swing and we are back with a new Chef Allegro recipe. This summer salad is easy to make and sure to be a hit during one of those hot summer days. This recipe comes from our Dining Services Director, Tim, in Stuart.  We hope you will all give it a try.

Serves: 6 people

Ingredients:

6 cups of spring mix lettuce 1.5 cups of mandarin oranges 6 tbsp. of chopped walnuts 1 red onion sliced into rings 24 grape tomatoes 3 cups of feta cheese 1.5 cups of dried cranberries

Instructions:

Place 1 cup of spring mix lettuce on plate or bowl

Top with: ¼ cup of oranges 2 onion rings 4 grape tomatoes ½ cup feta cheese ¼ cup dried cranberries

Recommended Dressing – Raspberry Vinaigrette Also you can add Grilled Chicken or Shrimp

Chef Allegro Chicken Salad

As a senior or caregiver, finding the time and energy to cook meals can be a challenge. We’re starting a series called Chef Allegro to provide simple recipes to seniors and caregivers. These recipes are inspired by popular meals served at Allegro’s communities. We will feature a simple version of our more popular dishes that can be made at home. Let’s get started…

Ingredients

• 1 pound diced pre-cooked chicken • 1/2 cup mayo • 1/3 cup diced celery • 1/2 tsp salt • 1/8 tsp white pepper • 1/2 tsp dijon mustard

Instructions 1. In medium size bowl place cooked diced chicken and place in refrigerator. 2. In separate bowl add celery, mayonnaise, Dijon mustard, add salt and pepper and allow mayonnaise mix sit for at least 30 minutes to let flavors meld. 3. Taste mayonnaise mix and if seasoning is correct add to chilled diced cooked chicken. 4. Fold chicken into mayonnaise mix and place back in refrigerator for 30 minutes again to let flavors meld. 5. Serve with crackers or your choice of bread and enjoy!

Allegro Black Bean Burger

Chef Andrew from Allegro knows all about healthy eating.  Two years ago Andrew’s wife experienced some health problems that made him realize the importance of healthy eating. When he came to work at Allegro he brought that same philosophy with him. Preparing healthy foods has become his passion both at work and at home.

We asked Chef Andrew and Allegro’s Dining Service Director, Patti, to share their favorite meal with us. They delighted us with their black bean burger. The black bean burger can be prepared grilled or baked. Chef Andrew recommends grilling. We hope you enjoy this burger just as much as our residents do.

Ingredients ½ Onion, Diced 1 Can Black Beans, Drained 4 Slices of Cheddar Cheese (or your favorite kind of cheese) ½ Cup Flour 2 Slices Bread, of Your Choice, Crumbled 1 tsp Garlic Powder 1 tsp Onion Powder ½ tsp Seasoned Salt ¼ tbsp. All Purpose Flour 2 tbsp. Olive Oil
